Classic hodgepodge "Autumn in a bank"
This hodgepodge for the winter is just a great dish. This recipe is a classic canned vegetable platter that you can easily prepare at home.
To prepare a borscht dressing for the winter with cabbage, you will need:
- 1.5 kg of cabbage;
- 1 kg of pepper;
- 1.5 kg of champignons;
- 1.5 kg of onions;
- 1.5 kg of carrots;
- 2 kg of tomatoes;
- 1.5 kg of cucumbers;
- 0.25 l of vinegar (9%);
- sugar;
- salt;
- 180 g vegetable oil;
- seasonings and spices.
What should be done:
- All vegetables that are used for harvesting, peel and wash thoroughly under running water.
- Chop the cabbage, but don't overdo it and don't cut it too finely.
- Cut the pepper into small (up to 0.5 cm) strips.
- But the tomatoes need to be cut into slices.
- Gently cut the cucumbers, carrots and onions into rings, like for a salad.
- Also cut the mushrooms into small slices.
- Now fry cabbage, carrots, mushrooms and onions in sunflower oil. Remember that vegetables will be juicier if you roast them all individually, not together.
- After they have been cooked, place them all in a small cauldron to simmer.
- Throw in all the other ingredients, except for the vinegar.
- Now you need to extinguish all this on the fire for half an hour.
- A few minutes before you turn off the heat, pour vinegar into the cauldron.
- The dish is ready, you can put it in jars and roll it up.

Variations of blanks
In addition to the classic method of making hodgepodge, there are many other variations.
With tomatoes
Tomato will add juiciness and sourness to your dish.
For this blank you will need:
- 750 g cabbage;
- 2-3 onions;
- 2 pcs. sweet pepper;
- 4-5 tomatoes;
- 3-4 st. l. tomato paste;
- sugar;
- salt;
- 2 tbsp. l. vinegar (9%);
- spices;
- 100 ml sunflower oil.
How to prepare such a hodgepodge:
- First of all, the cabbage must be cut into small strips. Winter varieties are perfect for the dish, which are easier to chop.
- Peppers and onions must also be peeled and cut into strips.
- Now you need to make the cabbage sag. To do this, take a small saucepan, put your chopped cabbage into it, and add 0.5 cups of water. Cover and put on fire.
- 5 minutes after placing the cabbage, add the peppers and onions to it.
- Now we add the rest of the ingredients of our dish: sugar, salt, sunflower oil, as well as chopped tomatoes, from which the skin was previously removed, and tomato paste. The latter may not be added, but with it the taste of your dish will turn out to be more delicate.
- Stir the mixture, cover and simmer for half an hour, reducing the heat.
- Remove the salt from heat, add vinegar, stir and cover.
With meat
Solyanka can also be made with meat. In this case, you will receive a full-fledged second dish that you can feast on in the winter.
To prepare it you will need:
- 1.5 kg of cabbage;
- 700 g carrots;
- 300 g onions;
- 100 g of vegetable oil;
- 200 g tomato paste;
- 350 g of meat;
- salt and seasonings to taste.
Cooking this dish is very simple:
- Rinse the cabbage thoroughly under running water and chop it (just do not cut it too finely).
- The meat also needs to be washed and cut into small strips. Do not forget to remove all strands and films from them.
- Peel the carrots and carefully cut them into rings.
- But the onion needs to be cut a little smaller - in half rings.
- Now the most important thing: deep fry the meat in a saucepan for 15 minutes.
- Add all the other ingredients of your dish to it and simmer for another half hour.
- After the dish is cooked, place it in the jars and let cool.
With eggplant
If you wish, you can diversify the menu and cook a hodgepodge with eggplant.
You will need:
- 1 kg eggplant;
- 1 sweet pepper;
- 200 g carrots;
- 300 g cabbage;
- 3-4 cloves of garlic;
- 50 g sunflower oil;
- salt;
- sugar;
- 30 g vinegar (9%).
How to cook this dish:
- First, you need to wash all the necessary vegetables, and you also need to remove the seeds from the pepper.
- To remove the bitter taste from eggplants, cut them into small cubes and sprinkle with salt on top. In this form, they should stand for about half an hour. After the end of the procedure, they are washed again and are completely ready for use.
- Cut the pepper and cabbage into strips, but it is better to cut the carrots into rings.
- Now take a stewing pot and pour oil into it. All your vegetables should be placed there, adding salt and sugar to them. Don't forget to mix it all up.
- First, you need to simmer your mixture for 40 minutes.
- Then add the remaining ingredients to the cauldron and simmer for another 3 minutes. Salt is ready!
With cucumbers
If you love cucumbers, you can also add them to your hodgepodge.
To make this dish, you will need:
- 1 kg of cucumbers;
- 1.5 kg of tomatoes;
- 0.5 kg of sweet pepper;
- 1.5 kg of cabbage;
- 1 kg of onions;
- 1 kg of carrots;
- 100 ml of vegetable oil;
- 100 ml vinegar (6%);
- sugar;
- salt;
- seasonings (to taste).
How to cook:
- First, you need to rinse all of your vegetables well.
- Cut each cucumber into cubes or strips, depending on personal preference.
- Cut the cabbage into strips.
- Peel the tomatoes and cut into small cubes.
- Cut the pepper into strips, having previously cleaned it of seeds.
- Carrots can be grated well on a coarse grater.
- Pour vegetable oil into a prepared saucepan or cauldron. Chopped vegetables are placed in a container and mixed.
- Also, don't forget to salt, sweeten, and add spices.
- Simmer your mixture until boiling, and at the end, be sure to top up with vinegar.
- Ready! Now pour the hodgepodge into jars and roll up.
With rice
This dish turns out to be very satisfying, and cooking it is as easy as shelling pears.
You will need:
- 1 head of cabbage;
- 400 g of meat;
- 50 g of rice;
- 2 tbsp. l. tomato paste;
- vegetable oil;
- salt.
What do we have to do:
- Wash the meat and cut into small pieces (you can use cubes).
- Pour oil at the bottom of the cauldron, heat it up and add the meat there.
- Next, you need to chop the cabbage.
- Wait until the meat is browned and crispy and add the cabbage. Simmer for a few minutes.
- Now you can add rice and pasta and simmer until the cabbage is soft and the rice is cooked through. Solyanka is ready!
Mushroom in a slow cooker
A mushroom delicacy can be prepared quickly and easily. You can use champignon or any other mushroom, and you can even make a hodgepodge with pickled mushrooms (but more on that another time).
What ingredients will be needed:
- 60 g onions;
- 200 g of cabbage;
- 100 g of mushrooms
- 1 pickled cucumber;
- 20 ml of vegetable oil;
- salt;
- sugar;
- 100 ml of water;
- 0.5 tbsp. l. tomato paste.
How to cook:
- Peel the onion, rinse under running water and chop.
- Put it in a multicooker bowl, add oil and fry.
- Cut the mushrooms and cucumber, add them to the slow cooker.
- Chop the cabbage and put in a bowl with the rest of the food.
- Mix salt, sugar and tomato paste in some water. Pour into a slow cooker.
- Simmer for an hour.
