Armenian
A classic recipe that has been actively used by housewives in Armenia for a long time. Small fruits will be ideal for him.
Each fig is cleaned of the tail and gently pierced the skin in several places with a toothpick. Dilute 15 g of alum in 2 liters of water and bring to a boil. After the water has boiled and the alum has dissolved, you can put the figs in the pot. Wait for the boil again, reduce the heat and leave the berries to boil for 5 minutes.
The water can now be drained and the figs are thoroughly rinsed under running water. Put water in the pot again - you need 1.8 liters, and bring to a boil. Pour 150 g of sugar, stir until completely dissolved and put the figs again. After the berries boil, cook them for another 5 minutes, then drain the water, and rinse the figs again.
We turn to the preparation of syrup, which will require 800 g of granulated sugar and 1.6 liters of water. Leave the boiled syrup over low heat, place the sliced half of the lemon in it. Cook for 5 minutes. Now you can add fire and put the figs in.
Wait again until the mixture boils, reduce the heat and cook until the jam is ready. As a rule, for the specified amount of food, 2 hours of cooking is sufficient.
Pour the cooked jam into sterilized jars and place in storage.
With nuts
This dessert is very similar to the beloved by many marmalade. For him you will need:
- 5 kg of figs;
- 5 kg of sugar;
- 1 lemon;
- 700 g of hazelnuts or hazelnuts;
- 1 liter of water.
Fill the fruits with sugar and leave overnight or for 8 hours. After that, add water and send it to the fire until the sugar is completely dissolved. After the jam has boiled, it is boiled for about 15 minutes and cooled to room temperature. Now we fall asleep the nuts, and repeat the cooking and cooling procedure.
The next step is to add the sliced lemon, peeled and pitted. Cook the jam for another 15 minutes and pour it into jars. You need to store such a delicacy in the refrigerator, closing it with ordinary plastic lids.
With plums
Here the spices set the tone - the recipe includes cloves and cinnamon:
- figs, sugar and plums - 500 g each;
- 1 tsp ground cloves;
- 1 tsp ground cinnamon;
- 1 tbsp. l. zhelix with pectin;
- 1 lime (can be substituted with lemon or orange).
Cut the plums in half, removing the seeds, cut the figs into 4 parts, removing the tails from it. Remove the zest from the citrus and squeeze out the juice. Pour 50 ml of water into a saucepan, lay out the prepared fruits and add the zest.
Cook the mixture over low heat until partial boiling. When the consistency of the future jam has changed, you can add citrus juice and a gelling mixture.
Bring to a boil, add sugar, and cook for another 40 minutes. Put the finished dessert in jars and seal. Store it in a cool place.
With lemons
For this recipe you will need:
- 1 kg of fig berries;
- 2 lemons;
- 0.6 kg of granulated sugar;
- 4 carnation umbrellas;
- 2 tsp balsamic vinegar;
- 100 ml of water.
Each berry is cleaned of tails and cut crosswise at the base. We put carnation umbrellas in any 4 figs. Thoroughly wash the lemons, cut into translucent thin slices. Pour water, lemon juice and vinegar into a saucepan. Add sugar, add sliced lemon. Cook the syrup for about 10 minutes, periodically skimming off the foam.
Put the figs in the boiling syrup and cook for 3 minutes. Now the jam can be removed from the heat, let it brew for 3 hours. This procedure should be repeated twice, after which the treat can be poured into jars.
With oranges
We wash 1 kg of figs, dry and cut the berries into quarters. We transfer the fruits to a saucepan, add 650 g of granulated sugar, 1 pinch of cinnamon, juice and zest of 1 orange there. Mix everything, cover with a clean towel and leave for several hours.
Now we put the mixture on fire, bring to a boil and cook for about half an hour. That's all, the orange and fig jam is ready! Pour into jars and seal.
