The secret of the delicious taste of the dessert lies in the way it is prepared. The “right” jam is made exclusively with citrus fruits, with or without zest, and with added sugar. Other fruits, citrus fruits, nuts can be added to it, but no artificial thickeners and water are used. The cooled orange dessert has a jelly-like consistency, like confiture, but it is achieved due to pectin, a natural gelling component.
Most of the pectin is contained in the peel of citrus fruits, so jam only made from orange peels or with the addition of zest hardens faster and has a thick consistency. If the recipe involves the use of zest, then wash the oranges well with a sponge or brush, and pour boiling water over for 15 minutes. Then we dry the fruit and peel off the peel with a knife or grater.
This is followed by the most difficult work - we clean each slice of stones and white film. If the lobules break in the process, it's not scary. Leaving films is undesirable because they impart a noticeable bitterness to the jam. To get a dessert completely without bitterness, you need to soak the pulp and peel in water. However, if the skin is very bitter, it is better to boil it 2-3 times for 5 minutes. When the slices are cleaned, they are weighed. This allows you to correctly calculate the proportion of sugar to pulp - it should be 1: 1.

In a multicooker
Many housewives are now making jam in multicooker, because all that is required is to prepare the ingredients and put them in a bowl. The kitchen assistant will do the rest herself, after which all that remains is to pour the dessert into jars.
Required products for jam in a slow cooker:
- 4-5 oranges (about 800 g of pulp at the exit);
- 1 lemon;
- 800 g of sugar.
The cooking process is as follows:
- Remove the peel from 1 orange and lemon and grind it on a grater.
- Cut the pulp of the remaining oranges into pieces.
- We put everything in a container and fill it with water for 20-24 hours.
- After the time has elapsed, drain the water, slightly squeeze the citrus blank.
- Put everything in a bowl, add sugar, stir and let stand for 1 hour to form juice.
- Then we turn on the device to the “Jam” or “Stew” mode, wait for the boil, then set the timer for 30–35 minutes, and cook, leaving the valve on the lid open.
Pour the finished dessert into sterile jars. If you need a uniform consistency, you can grind the finished jam with a blender.
In a bread maker
If the bread maker is equipped with the appropriate program, then making jam is even easier, because it itself mixes the ingredients.
Required products:
- 2-3 oranges (0.5 kg of pulp);
- 3 tbsp. l. lemon juice;
- 0.5 kg of sugar.
Cooking method:
- Cut the peeled orange slices into slices.
- We put in a bucket, add juice and sugar. If you want bitterness to be present in the treat, leave some of the peel.
- We launch the Jam program and calmly prepare the cans.
The jam in the bread maker turns out to be very thick, because, as a rule, it takes at least 1 hour to cook.
With peel
Jam with peels is an exceptional delicacy. It is she who gives the jam an incomparable aroma, a bitter taste and a dense texture similar to marmalade.
Of the ingredients you will need:
- 5-6 oranges (1 kg of pulp);
- juice of 1 lemon;
- 1 kg of sugar.

- Peel the oranges, chop the pulp, and cut part of the peel into thin strips or three on a grater.
- Fill the orange slices with sugar and leave for a couple of hours to form juice.
- Fill the chopped peel with water, bring to a boil and simmer for 10 minutes. Squeeze the cooked peel and let it cool.
- Add the peel, lemon juice to the citrus mixture, stir and slowly heat.
- Cook the jam for 40 minutes, stirring occasionally and skimming off the foam.
- Pour slightly chilled.
With grapefruit
You can add grapefruit to make the taste of jam more piquant.
Required Ingredients:
- 3 oranges;
- 1 grapefruit;
- 1 lime;
- 450 ml of water;
- sugar by weight of citrus pulp.
Cut the slices of oranges and grapefruit without films into pieces. Cut the lime together with the skin. Fill the citrus billet with water, boil over low heat for 30 minutes, and leave to cool for 10-12 hours. Then add sugar and boil the mass for 1 hour, stirring constantly, until it thickens slightly.
With peaches
Required Ingredients:
- oranges - 5-6 pcs .;
- 1 lime;
- peaches - 1 kg;
- walnuts - 150 g;
- sugar - 1.8 kg;
- water - 450 ml.
Peaches need to be doused with boiling water, peeled and cut into slices. Slice the orange slices, rub the citrus zest. Fill the fruit mass with water and send it to cook for half an hour until the peaches soften. During this time, we heat the sugar in a frying pan, and add it to the boiled mass. Cook, stirring occasionally, until the sugar dissolves, then add the crushed nuts and boil a little more. We close in the traditional way.
