General tips for novice cooks
To begin with, you should take a responsible approach to the choice of the variety. Depending on this, the drink will have different beneficial properties and taste. In general, any grape variety is suitable for obtaining a drink. But there are "dry" varieties, from which you can get the product only with the help of a juicer, and even then not very much.
You can prepare a drink both from certain grape varieties, and from all together.
- When dark and light varieties are used together, an unusual and aromatic drink is obtained.
- If you cook with only white varieties, then it is better to use nutmeg grapes.
- The following grape varieties are most often used for juicing: Cabernet, Lydia, Bianca, Siegerbe, Isabella, Armalaga, Ilyichevsky early, Johaniter, Golubok. More juice can be obtained from them.
- Table varieties are used much less often, since they are drier and you can get juice from them only in small quantities.

Ingredients:
- 5 kg of grapes;
- sugar to taste.

- Take and separate whole berries from the bunch and rinse them thoroughly, then pass them through a juicer.
- Grapes tend to have skins and seeds, so periodically stop the appliance and clean it of any dirt that has appeared.
- Strain the juice through a gauze filter into a saucepan, as ground bones are astringent and bitter, which must be removed.
- To do this, it is necessary to mix the juice with clean drinking water in a ratio of 2 to 1, where the water accounts for one part.
- Pour 50 grams of sugar into a saucepan for 1 liter of squeezed juice.
- Bring over medium heat until the first bubbles appear and cook for 15 minutes.
- Pour the juice carefully into the prepared jars and roll up immediately.
- It is recommended to shake before opening so that the drink has a homogeneous consistency.
Manual spinning
Such a recipe is complicated not so much in theory as in practice, because in order to prepare the juice, you will need to crush the berries by hand. But the drink obtained at home will not have a viscous and unpleasant aftertaste of crushed bones, as after a juicer.
Ingredients:
- 5 kg of grapes;
- sugar.
Recipe:
- Separate ripe berries from the bunch, rinse them, and then crush them with your hands or a press.
- Using a gauze filter, strain the juice from the pulp into a saucepan.
- Transfer the pulp to a separate container.
- Pour 1 liter of clean water over each kilogram of gauze filter residue and put on medium heat.
- Boil the pulp for 10 minutes and then cool.
- Strain the broth of the pulp through a gauze filter again and pour into the main juice.
- For every 2 liters of final liquid, add half a cup of sugar (optional).
- Pour the drink into sterilized jars.
- Roll up immediately and cool by turning upside down.
- Such conservation can last no more than 1 year.
Concentrated
Canning juice or compote does not always involve the use of sugar or water. Concentrated juice is a direct proof of this.
Ingredients:
- 4-5 kg of grapes.
Recipe:
- Squeeze out the juice in any way described above and strain it through a sieve.
- Cook in a saucepan for 5 minutes.
- Now strain the lightly boiled juice through a gauze filter.
- Pour the drink into bottles and roll up.
